Located in Cramant, on the foot of Côte de Blancs, we visited Diebolt-Vallois late may this year. Côte des Blancs is a mostly eastern-facing slope that owes its name to the color of the grapes planted: 95% Chardonnay. Champagnes in this area often referred to as "blanc de blancs".
Depending upon the wine, fermentation is either carried out in thermostatically controlled vats, or in wooden barrels. Malolactic fermentation takes place in all the wines except Fleur de Passion.
Together with another Danish couple, we took part in a small intimate tasting in the winery production hall.
